Mamma Mia! Here Antoine Goes Again!

“Mamma Mia” is the next production that the Techies are putting on, and I’m playing in the ensemble! In order to celebrate my fellow actors’ hard work, I decided to make a traditional Greek dessert called ‘Galatopita,’ which is a milk custard pie. I highly encourage you  to try it yourself! Enjoy, and do not forget to come see Mamma Mia on April 17th, 18th, 19th, 23rd, 24th, and 26th!

Galatopita

Ingredients:

  • 4 cups of milk
  • ⅔ cup of semolina
  • 2 eggs
  • ½ cup of sugar
  • Peel of one full lemon
  • 2 tablespoons of lemon juice
  • 1 tablespoon of vanilla extract
  • A pinch of salt
  • 2 tablespoons of cornstarch
  • 50g of butter
  • 1 egg yolk
  • 1 teaspoon of milk

Directions:

  1. In a large pan, mix together your milk, semolina, and sugar together until combined.
  2. Next, take one full lemon and zest the entire thing. Dump it into the mixture.
  3. Squeeze 2 tablespoons of lemon juice and mix it into the pan.
  4. In another bowl, mix together your eggs and cornstarch until combined. Pour it into the pan and mix together.
  5. Take your pan and put it over the stove at low to medium heat. Stir the mixture until it thickens. 
  6. Once the mixture is thick, turn off your stove and add in your butter and vanilla extract.
  7. Take out a baking tray and brush it with oil.
  8. Sprinkle in a little bit of semolina around the bottom of the  tray and pour your mixture in.
  9. In another bowl, mix together your egg yolk and a little bit of milk.
  10. Brush your egg yolk mixture on top of your Galatopita.
  11. Put it in the oven at 360 degrees for 40 minutes.
